Chocolate Cheesecake Mousse

Another OMG YUM! dessert. I'm starting to think that there's no such thing as a bad dessert for my taste buds. But what makes this one even better is that it is super low calorie (113 cals/slice - not including the chocolate shavings) and has many potential options for greater yumification.

Be sure to thaw for about half an hour before trying to cut or serve.

Ingredients

  • 1 container fat free whipped topping (Cool Whip), thawed & divided
  • 1 1-oz package Jell-o sugar free, fat free chocolate fudge pudding
  • 1 1-oz package Jell-o sugar free, fat free cheesecake flavored pudding
  • 1 1/2 cups unsweetened almond milk

Directions

  1. In a medium bowl combine Jell-o and almond milk and whisk until Jell-o has dissolved.
  2. Stir in most of the whipped topping leaving about 1/2 cup to be used later and mix well.
  3. Spread pudding mixture evenly in a 9-inch pie pan followed by a layer of the remaining whipped topping. Place in the freezer until solid.
  4. Remove from freezer and allow to thaw about 30 minutes before slicing and serving (you still want it mostly frozen, but soft enough to cut). If desired, sprinkle some chocolate shavings over the top.

Nutrition info per serving (makes 6): 113 cals, 22g carbs, 1g fat, 1g protein

Variation

I call this my "sorority" variation because we had a dessert just like this that was a "secret" recipe you supposedly only get when you get married. I think it's an urban legend because I don't know anyone who's ever actually gotten the recipe...
  • Mix Jell-o, milk and whipped topping together as above but reserve about half of the container of whipped topping for the second layer
  • Spread pudding mixture into an Oreo pie crust (extra 133 cals/serving)
  • Stir in 2 Tbsp heath bar toffee bits (found in the baking section) into the extra whipped topping (extra 27 cals/serving) and spread evenly over the pudding layer.
  • Pop in the freezer until solid and thaw before serving.
For total calories of 273 per serving - still not bad!
